Crispy Parmesan Potatoes
Yield: Serves 5
Ingredients:
- 14 baby potatoes, scrubbed and halved
- 1/2 cup grated Parmesan cheese
- 4 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika powder
- 1/2 teaspoon thyme
- salt and pepper to taste
Instructions:
Preheat oven to 400 degrees F.
Score the potatoes on the cut side.
Place the potatoes in a bowl. Add the paprika powder, garlic powder, thyme, and 2-tablespoons olive oil. Season with salt and pepper. Toss to coat.
Line a 9x13-inch baking pan with parchment paper. Add 2-tablespoons of olive oil and brush to evenly spread.
Use a spoon to scatter the Parmesan over the base. Spread as evenly as you can.
Place the potatoes, scored side down, on the cheese layer and press them into it.
Bake in the oven for 28-30 minutes or until the potatoes are soft and the Parmesan crust is golden brown.
Remove from the oven and set aside to cool slightly. Use a knife to cut through cheese crust and transfer to a serving dish. Serve with your favorite dip alongside.
