Strawberry Mousse is a very yummy and refreshing summertime dessert recipe that is easy to prepare and requires no baking. If you don't have fresh strawberries at home, use frozen strawberries or strawberry syrup.
Yield: Makes 7-9 servings, depending on the size of the servings
- 400 g fresh strawberries
- 3/4 cup sugar
- 1/4 cup cold water and 1/4 cup boiling water
- 1 1/2 tablespoons unflavoured gelatin
- 2 cups whipping cream or heavy cream (35%)
- 1 teaspoon lemon juice
In a blender, puree strawberries with lemon juice and sugar.
Sprinkle gelatin over 1/4 cup cold water and mix well. Add 1/4 cup boiling water and stir constantly until completely dissolved. Add the dissolved gelatin to strawberry puree, mix well and set aside.
In a mixing bowl, beat heavy cream until stiff peaks form (I use electric mixer).
Gently mix the whipped cream into the puree until well combined. Spoon into individual serving dishes.
Refrigerate for at least 2 hours, decorate with strawberry and serve.
