Spinach and Potato Dish

Spinach and Potato Dish recipe is a quick and healthy veggie recipe that can be served as a side dish or as an appetizer. Even if you are not a huge fan of spinach, you will love this spinach dish recipe. You just need to roast the potatoes in the oven, saute the fresh spinach and coriander with some spices, mix well and serve.

Yield: Serves 4-5

  • 12 cups chopped spinach, about 600 g
  • 1 bunch of fresh coriander (about 200 g), chopped
  • 2 medium potatoes, scrubbed
  • 6 garlic cloves, finely chopped
  • 6 tablespoons vegetable oil
  • 2 tablespoons olive oil
  • 1 teaspoon curry powder
  • 1 teaspoon turmeric powder
  • 1/2 tablespoon paprika powder
  • 1 1/2 tablespoons lemon juice
  • salt & black pepper to taste

Preheat oven to 400 degrees F. Cube potatoes to small cubes and toss in 2 tablespoons olive oil, paprika powder, salt and pepper. Stir well. Spread the potato cubes on a large baking sheet, lined with parchment to prevent them from sticking. Bake the potatoes in the preheated oven until they are cooked through, about 30 minutes.

Spinach and Potato Dish

Meanwhile, heat 6 tablespoons vegetable oil in a skillet over medium heat. Add the garlic and saute for 1-2 minutes. Add the turmeric and curry powder. Give it a quick stir. Add the spinach and coriander. Saute over medium-high heat until all the liquid is absorbed. Add the lemon juice, salt and pepper. Stir, taste and adjust seasonings. Set aside.

Spinach and Potato Dish

Place the roasted potato and spinach mixture in a serving dish. Serve with any kind of bread you like.
