Minty Green Pea Dip
Here is a simple and quick dip for anyone who loves the taste of green peas. All you need to make this minty green pea dip is cooked green peas, fresh mint leaves, yogurt, garlic, lemon juice and lemon zest. And all you need to do to make this dip is blend all the ingredient together in a food processor. Easy!
Yield: Serves 4
- 500 g frozen green peas
- 1/3 cup fresh mint leaves
- 2 cloves of garlic
- 1/2 cup plain yogurt
- 2 tablespoons olive oil
- zest and juice of 1 lemon
- 1/2 teaspoon ground cumin, optional
- salt and pepper
Cook the green peas in salted boiling water until tender. Transfer to an ice-water bath and then drain.
Place the peas, garlic, yogurt, lemon zest, lemon juice, olive oil, mint leaves and cumin into a food processor and blend until smooth. Season with salt and pepper. Serve with veggies or crackers.
