Mini Vegetable Sandwich Recipe
Mini Vegetable Sandwiches with mini pita breads are great for all kinds of parties. You can play around with this versatile recipe, adding whatever seasonal vegetables you have at home.
Yield: Serves 4
- 20 mini pita breads
- 17 small mushrooms, washed and chopped
- 2 cups fresh parsley, finely chopped
- 1 1/2 cups shredded mozzarella cheese
- 4 minced garlic cloves
- 3 tablespoons vegetable oil
- 1/2 teaspoon turmeric powder
- salt & pepper to taste
Heat oil in a pan over medium heat. Add the minced garlic and saute for 1 minute. Add the parsley and saute for 5 minutes. Add the mushrooms, turmeric powder, salt and pepper; cook uncovered until almost all the liquid is absorbed. Set the mixture aside.
Cut an opening at the seam of each pita bread by knife.
Stuff the mini pita bread with cheese and mixture.
Preheat the oven to 350 degrees F. Place the stuffed pita breads on a oven tray.
Put the tray in oven and bake till cheese melts, about 10 minutes. Serve immediately.
