Chocolate Cookies

Chocolate Cookies (or chocolate salami) recipe is an easy recipe to do with kids. These no bake chocolate cookies made with crushed biscuits, cocoa powder, and butter, then rolled into a sausage, chilled and sliced. Enjoy it with a cup of hot black tea or coffee!

Yield: Makes about 28 chocolate cookies

  • 250 g plain biscuits, I used Arrowroot biscuits (don't use Digestive biscuits)
  • 1 egg
  • 130 g sugar
  • 5 tablespoons unsweetened cocoa powder, about 20 g
  • 1/2 cup (110 g) butter, room temperature
  • 40 g slivered almonds
  • 1 teaspoon vanilla extract

Put biscuits into a zip lock bag and finely crush them with a rolling pin (or mortar and pestle). Set crushed biscuits aside.

Using a mixer, beat together egg and sugar until smooth, about 1 minute. Add butter, vanilla and cocoa powder. Beat until smooth and creamy.

Add crushed biscuits and almonds; mix well.

Lay out a sheet of cling film wrap on a dry surface. Spoon the biscuit mixture into a line, about 2 inch thick.

Roll the cling film around the biscuit mixture and form into a log shape. Make sure the cling film is firmly wrapped around the biscuit mixture.

Refrigerate for 10 hours. When they are ready; unwrap the cling film and slice the rolls into 1/2 inch slices. Store them covered in the fridge. Serve with black tea.

Mmmmmm! Should try it! Funny thing is just as it was crossing my mind that "I will try digestive" you said "don't use digestive!" As if my mind had been read!!!!
