This homemade Celery Soup recipe is one of the simplest to make. Celery Soup is a great recipe idea for vegetarian.
Yield: Serves 6
- 7-8 stalks of celery, washed and chopped
- 3 medium potatoes, peeled and chopped
- 1 medium onion, chopped
- 3 cups water
- 25 g butter
- 3 tablespoons lemon juice (you can add more or less)
- 3 teaspoons curry powder
- salt to taste
Place celery, potatoes, onion and water in a saucepan.
Add salt and curry powder; heat over medium-high. Cover the saucepan and bring to a boil. Reduce heat to medium-low and simmer until vegetables are tender, about 20-25 minutes.
Blend vegetables in a blender. Return to saucepan, add butter and lemon juice. Cover and cook for 3-5 minutes. If it's too thick, add more water.
