Beet Chips Recipe

If you need a super simple snack idea, you have to try this homemade beet chips recipe. This delicious crunchy beet chips is a unique alternative to the potato chip. Just slice beets evenly, using a mandoline slicer (but be careful, mandoline is very sharp). Then toss with olive oil and salt and bake.


Yield: Serves 2

INGREDIENTS
  • 3 medium beets, scrubbed and trimmed
  • 2 tablespoons extra-virgin olive oil
  • pinch of salt, optional
INSTRUCTIONS

Preheat oven to 350 degrees F. Slice beets 1/16 inch thick with a mandoline. In a large bowl, toss beets with extra-virgin olive oil and salt. Line 2 baking sheets with parchment paper. Arrange beets in a single layer.

Beet Chips

Bake for 18-20 depending on the size of the slices until they are crisp (be careful not to burn them). Transfer to a wire rack; chips will crisp up as they cool.
