Banana Pancake

Banana Pancake

Who would have thought you could make flourless pancakes with only 3-ingredients? To make the banana pancake, mash the bananas in a large bowl, add the eggs and cinnamon. Mix and fry in a pan with a little heated butter. Serve immediately either plain, with maple syrup, chocolate syrup, fresh fruit or any other toppings you like.

Yield: Serves 2

  • 2 large ripe bananas
  • 2 eggs
  • 1/4 teaspoon ground cinnamon
  • butter or non-stick cooking spray
  • maple syrup, chocolate syrup or whipped cream, optional

Mash the bananas in a bowl until smooth. Add eggs and cinnamon. Mix well and set aside.

Banana Pancake

Heat a nonstick pan over low-medium heat with a little butter or cooking oil spray. Pour about 1/3 cup of batter per pancake.

Banana Pancake

Cook pancakes for 1 to 2 minutes, or until bubbles appear on the surface and the bases are golden brown. Flip and cook until golden.

Serve immediately with whipped cream, maple syrup, chocolate syrup or any other toppings you like.
