Walnut and Parsley Stew
Yield: Serves 4
Ingredients:
  • 300 g meat (lamb or beef), cut into 2-inches pieces
  • 1/3 cup dried mint
  • 200 g fresh parsley, finely chopped
  • 3/4 cup sliced green onions
  • 1 small onion, finely chopped
  • 1 cup ground walnuts
  • 6 teaspoons sugar
  • 5 tablespoons lemon juice
  • vegetable oil
  • 2 tablespoons tomato paste
  • 1 teaspoon turmeric powder
  • salt & pepper to taste
Instructions:

Heat 1/3 cup oil in a skillet over medium heat. Add the parsley, mint, and green onions. Sauté for 8-10 minutes. Set aside.

Heat 3 tablespoons oil in a pot over medium heat. Add the onions and sauté until slightly golden.

Increase heat to medium-high, add the meat and cook until browned on all sides. Add the turmeric powder stir well.

Pour 4 cups hot water. Cover the pot and bring to a boil on high heat. Reduce heat to medium and simmer until meat is tender (not completely cooked), about 60 minutes (cooking time depends on the meat).

Then add the herb mixture, tomato paste, ground walnuts, sugar, salt and pepper to taste.

Cook covered until meat is completely cooked and stew is thickened. Add lemon juice and adjust seasoning. Serve!
