Vegetable Chow Mein
Yield: Serves 4
Ingredients:
  • 180 g chow mein noodles
  • 250 g fresh bean sprouts
  • 1 medium green pepper, cut into thin strips or chopped
  • 170 g snow peas
  • 5 tablespoons cooking oil
  • black pepper to taste
  • 1/3 cup soy sauce
  • 1 teaspoon garlic powder
Instructions:

Cook the noodles according to the package directions.

Drain into a colander, rinse with cold water, and then return the noodles to the pot. Toss the noodles with a little of oil to prevent sticking.

Heat 3 tablespoons oil in a large pan over medium heat. Add the green pepper and snow peas. Cook for 5 minutes.

Add the bean sprouts, garlic powder and pepper and cook for 3-5 minutes. Then add the soy sauce and cook for 2 minutes. Set aside.

Heat 2 tablespoons oil in a large pan or wok over medium heat. Add the noodles and fry for 2 minutes, stirring occasionally.

Add the vegetables to the noodles, toss everything to combine and cook for 2 more minutes. Adjust the seasonings and serve.
