Taco Salad from Cooking and Cooking
Yield: Serves 5-6
INGREDIENTS
INSTRUCTIONS

Heat 1 tablespoon oil in a skillet over medium heat. Add the onion and saute for 6 minutes. Increase heat to medium-high; add the ground beef and saute until no longer pink, stirring occasionally.

Drain well and return to the skillet if needed. Add the ketchup, crushed tomatoes, turmeric, oregano, taco seasoning, salt and pepper. Cover the skillet and cook over medium-low heat for 10 minutes. Taste and adjust seasonings. Set aside.

In a large bowl, combine the lettuce, tomato, beef mixture, mayonnaise, cheddar, and mozzarella cheese. Sprinkle with corn chips. Serve immediately.
