Yield: Serves 4
- 150 g baby spinach
- 1 canned (280 ml) mandarin oranges, drained
- 3 tablespoons extra-virgin olive oil
- 4 tablespoons balsamic vinegar
- salt & black pepper to taste
Place spinach and mandarin oranges in a large salad bowl. Combine olive oil, balsamic vinegar, salt and black pepper for salad dressing. Toss dressing with salad just before serving.
