Scallion Potato Soup
Yield: Serves 6
Ingredients:
  • 2 bunches scallion, chopped (about 3 cups)
  • 3 medium potatoes, peeled and shredded
  • 1 medium onion, finely chopped
  • 1 1/2 cups chopped tomatoes
  • 6 cups chicken broth
  • 3/4 cup heavy cream
  • 3 tablespoons dried oregano leaves
  • salt & pepper to taste
Instructions:

Place scallion, potato, chicken broth and onion in a large pot. Cover the pot and bring to a boil. Add tomato, oregano salt and pepper to taste.

Reduce heat to medium, and simmer covered until vegetables are tender.

Once vegetable are cooked and reached desired thickness, pour cream and adjust seasoning. Serve!
