Roasted Pistachios
Yield: Makes 4 cups roasted pistachios
Ingredients:
  • 4 cups raw pistachios (with shell)
  • 1/4 cup white wine vinegar
  • 1 cup water
  • 4 teaspoons salt
Instructions:

Pour water into a large and deep saucepan. Add salt and vinegar. Bring to a boil.

Add pistachios and stir. Simmer over medium heat until all the liquid is absorbed.

Preheat oven to 280 degrees F.

Spread pistachios on a baking sheet in a single layer. Roast in the oven for about 45-50 minutes or until they are roasted, stirring after 30 minutes.

Remove from the oven and let it get to room temperature before serving.
