Roasted Pistachios from Cooking and Cooking
Yield: Makes 4 cups roasted pistachios

Pour water into a small mixing bowl. Add salt and dissolve completely. Pour the salted water into a large and deep saucepan. Add the white wine vinegar and bring to boil over medium-high heat. Add the raw pistachios to the boiling salted water and stir constantly until all the liquid is absorbed.

Preheat the oven to 280 degrees F. Place the salted pistachios on a cookie sheet in a single layer. Place it on the middle rack of the oven and bake for 60-75 minutes. Check the pistachios frequently and stir every 30 minutes while they are being roasted, to ensure an even roasting. Remove from the oven and let it get to room temperature before serving.
