Mini Vegetable Sandwich from Cooking and Cooking
Yield: Serves 4

INSTRUCTIONS

Heat oil in a pan over medium heat. Add the minced garlic and saute for 1 minute. Add the parsley and saute for 5 minutes. Add the mushrooms, turmeric powder, salt and pepper; cook uncovered until almost all the liquid is absorbed. Set the mixture aside.

Cut an opening at the seam of each pita bread by knife. Stuff the mini pita bread with cheese and mixture.

Preheat the oven to 350 degrees F. Place the stuffed pita breads on an oven tray.

Bake in the oven untill cheese melts, about 10 minutes. Serve immediately.
