Cucumber Avocado Salad with Feta
Yield: Serves 2
Ingredients:
  • 2 small ripe avocados, peeled, pitted and cubed
  • 2 cups thinly sliced cucumbers (about 4 medium cucumbers)
  • 1/4 cup finely chopped fresh mint
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons lemon juice
  • salt & black pepper to taste
Instructions:

In a small bowl, whisk the lemon juice and olive oil. Add salt and black pepper, to taste. Set the dressing aside.

Place the sliced cucumbers, avocado and mint in a salad bowl. Drizzle dressing over top and gently toss to evenly coat. Add the crumbled feta cheese and serve.
