Chocolate Covered Bananas
Yield: Serves 3
Ingredients:
  • 2 bananas, peeled and cut crosswise into thirds
  • 1 cup semisweet chocolate
  • 1/3 cup coarsely chopped salted peanuts for topping (or shredded coconut)
  • 6 popsicle sticks
Instructions:

Insert popsicle stick into each banana piece.

Lay the bananas on a piece of parchment paper or wax paper and freeze for at least 2 hours.

Melt the chocolate in a double boiler or in 30 second intervals in the microwave until smooth, stirring well in between.

One by one, dip the frozen banana into melted chocolate and twirl to remove any excess.

Immediately sprinkle each banana with chopped peanuts and set on a baking sheet with waxed paper. Refrigerate until chocolate is firm. Store in refrigerator up to 2 days.
