Broccoli Soup
Yield: Serves 5
Ingredients:
  • 400 g broccoli florets, washed
  • 2 medium potatoes, peeled and chopped
  • 1 small onion, chopped
  • 3 cups chicken broth (or vegetable broth)
  • 3 tablespoons dried basil
  • 2-3 tablespoons lemon juice
  • 2 teaspoons dried oregano leaves
  • 1 cup whipping cream
  • salt & pepper to taste
Instructions:

Place the broccoli florets, potatoes, chopped onions and broth in a pot. Bring to a boil. Reduce heat to medium-low and simmer covered until vegetables are tender.

Remove from heat and let cool slightly.

Blend the soup in a blender until pureed. Return to the pot, add the whipping cream, oregano and basil. Season with salt and pepper.

Cook until heated through, about 5 minutes and serve with lemon juice on the side.
