Preheat oven to 350 degrees F. Slice beets 1/16 inch thick with a mandoline. In a large bowl, toss beets with extra-virgin olive oil and salt. Line 2 baking sheets with parchment paper. Arrange beets in a single layer.
Bake for 18-20 depending on the size of the slices until they are crisp (be careful not to burn them). Transfer to a wire rack; chips will crisp up as they cool.
