Yield: Serves 3-4
- 150 g baby spinach
- 1 small ripe avocado, peeled, pitted and diced
- 2 tablespoons extra-virgin olive oil
- 1 lime
- salt & black pepper to taste
Place the baby spinach and diced avocadoes in a large salad bowl. Combine the olive oil, lime juice, salt and black pepper for salad dressing. Toss dressing with salad just before serving.
