Avocado Spinach Salad
Yield: Serves 3
Ingredients:
  • 150 g baby spinach
  • 1 small ripe avocado, peeled, pitted and diced
  • 2 tablespoons extra-virgin olive oil
  • 1 lime
  • salt & black pepper to taste
Instructions:

Prepare the dressing: In a small bowl whisk together the olive oil, lime juice, salt and black pepper until well combined.

Place the baby spinach and diced avocadoes in a large salad bowl. Drizzle with dressing; toss to coat. Serve immediately.

Do not dress the salad until you are ready to serve it, or the spinach will wilt.
